First things first preheat your oven to 350 degrees (the magic number). When your oven has come to temperature put in the tinfoil wrapped garlic bread, and place the braised fennel and charred leek on a pan and also place this in the oven. This will take about 10 minutes to heat up. A perfect amount of time to finish the rest of the dish!
Take the Hennesy buttercream sauce and with a spatula and get it into a saucepan and heat it up on low heat. Add the potatoes, lobster and rosemary into the pan and let it heat up while stirring constantly. Perfect time for a chef pro tip! The sauce for this dish is very delicate and will want to split. Keep a little bit of either cold water or cream on hand. I will explain in a second. So when the sauce starts to bubble it is time to plate! Take the items out of the oven and grab yourself a slotted spoon. Place the fennel in the centre of a shallow bowl and split up the lobster, potatoes, and charred leeks between the two dishes. If you can see the butter coming out of your sauce add a little bit of the cream or cold water you have (max about a tablespoon) and swish the pan around until the sauce comes back together. Pour the sauce over the now beautifully arranged plates, serve with the bread and dig in!
