Stuffed & Baked Lobster Dinner


Our Fishmonger Eric and myself dreamed up this fantastic dish over a couple cold crisp beers after our work week last Saturday, and we are excited to share this preparation with you. Two whole Atlantic Lobsters that we’ve split and stuffed with bay scallop, belle river crab, Nordic shrimp, garlic butter, mascarpone and herbs. Along with the two lobsters we have included our potato salad and some of terra mor farms kale dressed with an anchovy vinaigrette


Preheat oven to 400 degrees Fahrenheit.

Once oven is preheated place lobsters on a baking tray and bake on middle rack in oven for 25-30 minutes until golden brown and delicious looking. While lobsters are warming in oven plate potato salad in a bowl, toss kale salad ingredients with vinaigrette, season with salt and pepper and plate in bowl.
